Homemade Amaretti Cookies
義式傳統杏仁餅乾

INGREDIENTS (20 cookies)
1 egg white
1/4 cup caster sugar
3/4 cup + 2 tablespoons almond flour (85 g)
1/4 teaspoon almond extract
pinch salt
1/2 tablespoon confectioner's sugar for dusting
DIRECTIONS
Line cookie sheets with parchment paper.
Preheat oven to 200 degrees C . Beat the egg whites until doubled (not too firm). Add in the sugar and whisk just until combined. Fold in almond flour, almond extract, and salt cutting the batter carefully with a spatula.
Make small balls (1/2 tablespoonfuls) with hands and place the cookies on the parchment paper. Dust them with confectioner's sugar.
Bake in the oven for 10 minutes , or until golden brown. Cool on a wire rack before serving.
